A snapshot into the life of the chickenwing

The greatest thing you'll ever learn is just to love and be loved in return. Complete in Christ.

And GOD is able to make all grace abound to you, so that in all things at all times, having all that you need, YOU will abound in every good work. 2 Cor. 9:8

An Update!! For the faithful xangonians :)

Well, things are moving quick in my life.Neil and I have just finished what seems to be the last part of the application process for being international workers in China.  It has been a long process with many application forms (I don't like application form ).  But we successfully passed the interview and so now I am accredited with the C&MA Canada and our names will go to be approved at the national level.

If all works to plan, we will be in China in the next 10 months. Which means anothing packing up of stuff, throwing or giving away of items that can not be taken with us to China, getting all the legal paperwork filled in, saying goodbye to family and friends.  It's really the last one that I dread the most- I don't think I will get really emotional on the actual day but it''ll be a hard adjustment to make for months afterwards.  Neil and I get often very sad thinking that we are going to leave our VWAC family as well.  It's been a good 3 1/2 years working in the little church plant and we've seen so many gracious and miraculous things happen. :)

So, as for now, I'm finishing up my courses at ACTS seminary in Langley and keeping up my TOCing.  I definately enjoying the cooking factor most days and I can't wait to get back into some more baking.  I have just been gifted probably 3 lbs of wild saskatchewan blueberries!! Woohoo, crumbly blueberry muffins this week!! yum!

Lameo

It has been a month since my last post- it hasn't been too exciting a month but certainly I should be better at updating than that...heehee :)
Winter came and went quickly on the west coast this past weekend- to the delight of my husband, the snow arrived and to the dismay of my husband, it also vanished within two days.   But he decided to enjoy himself by going for a glide in the park on his cross-country skiis.

My 26th
Monday was suppose to be a pretty low-key day.  The car was to be taken into the mechanic, my application forms for returning to China were suppose to be finished and to end the evening right, my husband suggested we have a nice dinner together.  All the rest was a surprise.

After a nice trip to MEC, we decided to visit Granville Island just for fun.  Here I am by the cement truck on crack (courtesy of ocean cement on Granville Island)  It even played Christmas music....

Then to warm up, Neil and I indulged in some hot beverages (mine being a mint hot chocolate which was quite nice indeed) in the public market before purchasing some goodies for the next day's lunch.

Then, the surprise of the evening- long stemmed roses and dinner at the Pacific Institute of Culinary Arts.  The Monday special was the two for one offer in which for two of us, we could get a 3 course meal for only $36!!!

The presents were soon to follow- see me sporting my new garlic mincer (it rolls and minces your garlic- quite fabulous!) as well as an appropriate book (Little Miss Birthday).

The food was favourful (portion size was wonderful) and the waiter was quite cordial.  Starting from left to right-
Appetizers
Oyster &Shiitake Mushroom Ravioli, Wild Mushroom Broth, Parmesan
Tomato Soup
Baby Spinach Salad with Goatcheese (no fried Brie that day---boohooo!) and carmelized apples

Potato Wrapped Sockeye Salmon, Ginger Soy Maple Broth
Chicken Scaloppini "Puttanesca', Yukon Gold Potato Pave, Broccolini

And for dessert, they were so nice to spruce up my plate with some chocolate embelishments (Sacher Tower with Raspberry Coulis)

Backlogged

In order to make up for some lack of posting in the last little while, this post will be a mishmash of many things.
This recent spurt of work has kept me more than adequately busy and tired.  Funny enough, this year has brought on more work in the secondary schools than elementary.  The last two weeks have been filled with lots of secondary library training and funny enough, I actually do enjoy being among the books all day.  Checking in, Checking on, Cataloging books, shelving.  It's all quite relaxing.  I don't think it will be a career but it has certainly been a good change of pace.  (For those interested, the teacher-librarians at Tupper and Killarney have been the two that have 'taken me under their wings')
I am excited to get back to a primary class on Monday but I am enjoying catching up on my reading and learning a new trade (now both Neil and I can say that we were in a library today)

A while ago, I made some balsamic chicken drumsticks.  They turned out okay (according to 'the man') but I wasn't so happy with them.  They were suppose to be drummettes.  But due to their freakishly expensive pricetag I usually opt not to buy them.  Until one week I decided to buy some just for a night when we didn't want to do that much cooking.  So, here they are.  They were actually quite yummy- definately recommend for small drummettes- The balsamic vinegar is a little intense for the regular sized drumsticks.

As well, the in the tradition of October, Neil and I had people over to care pumpkins.  In part to pay tribute to our weekly updated online cartoon (homestarrunner.com) and in part just cause it's fun to get up to your elbows in all the pumpkin guts.  I am amazed at the skill it takes to carve a gourd- tests your spatial thinking and knowledge of structural integrity.  So here they are- Homesar, Bubs and some scary face because Pete's pumpkin decided to fall apart before his picture of stinkoman was finished...(hahaha- you can't see the tin foil at the back of the pumpkin from the failed attempt)

Move over Mike Holmes

The renovations are still underway at the Kirkland pad.  We have recently begun our finishing touches on the kitchen.  This past weekend we installed our feature wall and the week before Neil and I toiled until midnight to install the new cabinets from Ikea.  Viola!
